Sweet and Sour Meatballs
Serves 4
Meatballs
1 lb. ground beef or pork
2 or 3 slices of bread torn into small bits, or 1/2 cup dry bread crumbs
2 Tbsp. finely chopped onion
1/2 – 1 tsp. salt
1 egg
1/4 cup milk (if using dry bread crumbs, otherwise, can omit)

This is the first time I tried this particular recipe. The original recipe called for pork tenderloin, and did not include broccoli. I substituted chicken breast for the pork tenderloin, and broccoli for the red pepper (as the fridge contents dictated). In the same apple theme….here’s another family favorite. It’s quicker than pie, and healthier, too (I think).

This recipe came about after I threw the remainder of a batch of fresh salsa (chopped tomato, onion and jalapeno) into a tuna casserole I was making. The results were so tasty, they were worthy of becoming a family dinner “repeat”.
