Swedish Rye Bread
3 cups warm water
1/2 cup sugar
1/3 cup molasses
1 pkg. dry yeast (1 Tbsp)
3 cups medium rye flour
3 cups unbleached white wheat flour
2 tsp. salt
Mix the first four ingredients together in a large bowl. Let set for 10 minutes in a warm place. Add both flours and salt, a little at a time, and knead. Use more flour, if needed.
Cover, and let dough rise 1/2 hour. Knead again and form into 2-3 loaves. Cover and let rise another 1/2 hour, or until double in size.
Bake at 350*F for 25-30 minutes.
