Quick Oatmeal Cookies

A staple cookie jar filler.  This is another standby favorite recipe from my logging camp cookbook.

Quick Oatmeal Cookies
Makes about 2 dozen.  Double or triple recipe for larger batch!

1/2 cup butter, margarine, shortening (or combination)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp. vanilla
1 Tbsp. milk
1 cup flour
1/2 tsp. soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup quick oats

Cream butter and sugars.  Beat in eggs.  Stir in vanilla, milk, and dry ingredients.  Mix well.  

Stir in one (or more!) of the following:
3/4 cup chocolate chips (or M&Ms...)
1/2 cup raisins
1 can flaked coconut
1 tsp. grated orange rind

Drop by spoonfuls on lightly greased cookie sheet at bake at 350* for about 10 minutes, or just until set and lightly browned.  Remove from pan to cool.  Especially yummy eaten fresh out of the oven with a glass of cold milk.  Or store in a sealed container (cookie jar, tin, tupperware...).
