Chow Mein

Chow Mein

200g steam fried noodles (eg. Mr. Noodles)
1/2 cup diced chicken (or use pork, beef, shrimp, or mushrooms, etc. for the main ingredient)
1/2 cup diced green pepper
1/2 cup sliced onion
1/2 cup sliced or shredded cabbage
1 cup chicken broth
1/2 cup frozen green peas
1/2 cup bean sprouts
1 T. cornstarch
1 T. soy sauce
1-2 T. vegetable oil (approx. - enough for frying)

Bring 1 quart of water to a boil, add noodles and boil for 3 - 4 minutes.  Drain in a colander. Meanwhile, heat vegetable oil in wok and fry chicken, then add green pepper, onion and cabbage.  Stir fry a couple minutes, then add chicken broth, cover and cook until the vegetables are tender.  Remove cover and add bean sprouts and peas.  Bring to a boil again.  Stir together the cornstarch and soy sauce, then add to thicken and flavor the broth.  Add cooked noodles, mix together, cook for about 1 minute.  Remove from heat and serve.

Vary the recipe by using different main ingredient or vegetables, according to taste and what you have on hand.  Meat portion can also be increased if desired.
