1 egg 1 cup buttermilk 2 Tbsp. vegetable oil 1 cup flour 1 Tbsp. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt
Stir all ingredients together in a bowl with a wire whisk. Batter will be very thick. Spoon or pour approximately 1/4 cup batter onto pre-heated, lightly greased griddle or skillet. Cook over medium-high heat until bubbles begin to appear on top. Carefully flip over and cook until browned and fluffy. Serve piping hot with butter and syrup.
