Norwegian Sweet Milk Pancakes

Beaten egg whites make them extra light and fluffy.

Norwegian Sweet Milk Pancakes

2 cups sifted flour
2 tsp. baking powder
1 tsp. salt
2 Tbsp. brown sugar
3 eggs
2 Tbsp. melted butter
2 cups milk

Mix together flour, baking powder, salt and brown sugar.  Separate eggs and beat white until fluffy, then set aside.  In another bowl, beat egg yolks, melted butter and milk.  Mix egg yolk mixture with flour mixture.  Fold in beaten egg whites.

Heat griddle or skillet and lightly grease with butter.  Pour about 1/4 cup of batter for each pancake and cook until full of bubbles and browned on bottom.  Flip and cook until brown on the other side.  Serve hot off the griddle with butter, maple syrup, honey, jam, or sliced fruit.
