1 Tbsp. ground allspice
1 Tbsp. dried thyme
1 1/2 tsp. cayenne pepper
1 1/2 tsp. black pepper (freshly ground is best)
1 1/2 tsp. ground sage
3/4 tsp. ground nutmeg
3/4 tsp. ground cinnamon
2 Tbsp. salt
2 Tbsp. garlic powder
1 Tbsp. sugar
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup white vinegar
1/2 cup orange juice
juice from one lime
1 scotch bonnet pepper, seeds removed, and chopped fine
1 cup chopped white onion
3 green onions, chopped finely
4 boneless chicken breasts
Mix first 10 ingredients (dry spices, etc) in a large bowl. Whisk in next 5 ingredients (liquid ingredients). Add pepper and all onions, mix, and then add chicken breasts. Allow to marinate, covered, for at least 1 hour and preferably longer if you can.
Preheat grill. Grill chicken breasts for about 6 minutes on each side or until cooked through, while basting with the marinade.
