Glumz Pankuche

Glumz Pankuche

Pancake (Pankuche):
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1 cup milk
2 eggs
2 Tbsp. cooking oil

Cheese Filling:
1 cup cottage cheese
4 tsp. sugar
1/4 tsp. cinnamon

Mix flour, baking powder, salt, milk, eggs and oil and beat until smooth.  Lightly grease and heat a 10\" (or so) skillet, and pour in about 1/3 cup batter for each pancake.  Tilt skillet to spread batter across bottom and make a thin pancake.  When bubbles form and pancake is lightly browned on bottom, flip over and cook the other side.
Place on a warm plate, or keep warm in a towel.

Mix cottage cheese, sugar and cinnamon and place a spoonful in the center of each pancake, folding over on all 4 sides to make a square shape.  (Cheese filling recipe can be increaed or doubled if more is desired).

Place back in the skillet, folded side down, and cook 2-4 minutes each side until filling is heated through.  Serve hot with syrup, or sprinkled with sugar.

Goes well with bacon, ham, pork or breakfast sausage served alongside.

Pancakes can also be eaten without the cheese filling, and simply rolled up with butter and sugar, or cinnamon-sugar instead.
