3 cloves garlic, minced
1/4 tsp. ground ginger (or substitute minced, fresh, ginger root)
1/2 tsp. pepper
2 tsp. sugar
2 Tbsp. soy sauce
1 tsp. curry powder
1/2 tsp. salt
1 Tbsp. fish sauce (opt)
2 1/2 lbs. cut-up chicken or chicken pieces
Mix first 8 ingredients together into a marinade sauce and marinate chicken in it for at least 30 minutes, longer if possible.
Barbecue chicken pieces over a charcoal fire, or broil in an oven, basting with sauce and turning as needed until tender and cooked through.
Alternately, you can place the chicken on a baking sheet or pan, pour the sauce over, and bake in the oven at 400*F for 10 minutes, then reduce heat to 350*F and continue to bake for another 45 minutes or so until done.
Serve with sticky rice.
