Indonesian Fish with Tomato Sauce (Ikan Dengan Sambal)
Indonesian Fish with Tomato Sauce (Ikan Dengan Sambal)
1 - 2lb. whole fish (cleaned) 1 Tbsp. lime juice 1/4 tsp. salt 2 Tbsp. oil
Place fish on a piece of aluminum foil, or banana leaves and season with lime juice, salt and oil. Wrap up in banana leaves or foil and cook on charcoal grill or broil in oven until done (opaque and tender, fish will readily flake off of bones). Serve with tomato sauce.
Indonesian Tomato Sauce: 3 Tbsp. lime or lemon juice 2 tomatoes 5 red chilies 4 shallots 4 Tbsp. soy sauce 4 sprigs fresh basil
Cut and slice or chop tomatoes. Seed and slice or chop chilies. Peel and slice or chop shallots. Chop basil. Combine all ingredients into a sauce and serve with grilled or broiled fish. Traditionally served in individual bowls for diners to add to their fish as they liked.
