4 large tomatoes
1-2 cucumbers (1 long English, or 2 medium)
1/2 - 1 red onion (opt)
1 cup (4 oz.) feta cheese, crumbled
salt and pepper to taste
2 Tbsp. dried oregano
2 Tbsp. lemon juice
1 Tbsp. olive oil
10 black kalamata olives
Slice the tomatoes and cucumber into bite-size chunks. Finely slice onions. Add feta cheese. Season with salt, pepper and oregano. Drizzle in lemon juice and olive oil. Toss gently to blend and serve with olives on top.
