Old Fashioned Fruit Cake

Old Fashioned Fruit Cake

3 cups flour
1 1/3 cup sugar
2 tsp. salt
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 cup orange juice
1 cup salad oil
4 eggs (2/3 to 1 cup)
1/4 cup dark corn syrup

2 cups raisins
1 pkg (8oz) pitted dates, cut up (1 1/2 cups)
1 lb. (2 cups) candied fruit
1/2 lb (about 2 cups) pecan halves

Mix first 10 ingredients (flour through corn syrup) in a large bowl with a mixer.  Mix 1/2 minute on low speed while scraping the sides of the bowl. Then beat for 3 minutes on high speed, occasionally scraping the sides of the bowl.  Add fruits and nuts and stir in.

Line 2 loaf pans with aluminum foil and grease.  Fill with batter and spread evenly.  Bake at 275*F for 2 1/2 to 3 hours or until wooden toothpick inserted in center of loaf comes out clean.  You can cover the tops of the pans with aluminum foil the last hour of baking to keep from getting too brown.  Remove from pans and cool.  Wrap in aluminum foil or plastic wrap and store in a cool place.
