WINTER VEGETABLE CHICKEN SOUP
1 Tbsp olive oil
4 cups chicken, cut in bite-size pieces
1/2 cup onion, chopped
2 cloves garlic, minced
2 cups carrots, sliced
2 cups potatoes, cubed
3 1/2 cups cabbage, coarsely chopped
1/2 apple, peeled and chopped
1/2 tsp pepper or to taste
1 tsp salt or to taste
opt. red pepper flakes, to taste
1 – 2 cans chicken broth

1 lb great northern beans
3 cups ham, cubed
1 tsp olive oil
1 cup chopped onion
1 1/2 – 2 cups sliced carrots (about 3 or 4)
salt (1/2 – 3/4 tsp and then check – be careful it doesn’t get too salty with the ham)

The 24 hour stomach flu hit our house last week. This is the soup I made when everyone felt well enough to eat again.

This is a thick, vegetarian, minestrone type of soup, using garbanzo beans (also known as chickpeas), and fresh vegetables. I used potatoes, carrots and cabbage, but you can use other seasonal vegetables or what’s on hand.
