In the same apple theme….here’s another family favorite. It’s quicker than pie, and healthier, too (I think). :)

Apple Crisp

4-5 medium-large apples (Granny Smith is best)
1/2 – 3/4 cup brown sugar (I use 1/2 cup or a little less)
1/2 cup unbleached flour (can substitute whole wheat)
1/2 cup rolled oats (quick or old-fashioned)
1/2 tsp. cinnamon (can omit)
1/4 – 1/3 cup butter or margarine, softened (I use a little less than 1/4 cup)

Peel, core, quarter and slice apples. Put in greased 8×8 square pan. Stir sugar, flour, oats, cinnamon together. Mix in butter with fork, or with your hands, until crumbly mixture is formed. Sprinkle over the top of the apples. Bake at 375* for about 30 minutes until top is golden brown and apples are tender (use knife or fork to check). Eat warm with vanilla ice-cream. Or cold. Yum! A family favorite!

Note: Whole wheat flour will give it a more wheaty flavor, but it’s healthier!
