Baked Apple Pancake

Ingredients:
2 apples
3 Tbsp. butter
3 Tbsp. sugar
1 tsp. cinnamon
3 eggs
1/2 cup milk
1/2 cup flour
1/2 tsp. salt
Peel, core and slice apples in thin slices (about 1/4″). Melt butter in bottom of skillet or pan. Stir apple slices, sugar and cinnamon into the butter and saute over low-med about 10 minutes, stirring occasionally.
Beat eggs in a bowl. Beat in flour, salt and milk. Transfer apple mixture to a quiche, pie or casserole dish and spread out on the bottom. Pour batter over the apples and bake at 425*F for about 18 minutes.
If you have an iron skillet, or one that can tolerate high oven heat, leave apples in skillet, pour batter over, and bake as above.
