I made these in a rush when a friend came over a little earlier than expected for tea.

Apple Scones

2 cups flour (unbleached, whole wheat, or combination)
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup butter or margarine, cold
1 large or 2 medium apples – cored, peeled and grated
1/2 cup milk
1/2 cup raisins or currants (opt)

milk for brushing top (opt)
cinnamon sugar for sprinkling on top (opt)

Mix together dry ingredients: flour, sugar, baking powder, soda and salt. Cut in butter or margarine. Add apple and milk (and optional raisins) and stir until combined. Turn out on floured counter and knead gently about 10 times. Divide in half and pat each into a round about 6 inches in diameter. Put on greased cookie sheet and score the top with a sharp knife into 6 wedges. Brush tops with milk and sprinkle with cinnamon sugar. Bake at 425*F for about 15 minutes, until lightly browned. Serve warm with butter.
