Here’s a recipe from my mom. Bananas, marshmallow, whipped cream and berries – cool and delicious! Great for a special dessert treat.

BANANA MARSHMALLOW FLUFF
32 marshmallows (8 oz.)
¼ cup milk
½ cup nuts (finely chopped) (may omit)
1 or 2 ripe bananas (diced)
1 cup whipping cream
Fresh or frozen strawberries or other fruit

In double boiler, combine marshmallows and milk. Stir over low heat until marshmallows are melted. Cool and add nuts and bananas. Whip cream and fold in. Pour into mold or 9×9 inch pan. Refrigerate until set. Top with strawberries or other fruit when served. Serves 6-9.

Variation:
The last time I made it, I had frozen blueberries and a few fresh strawberries. I put a little sugar on them, brought it to a boil, then thickened with a little water & corn starch. Sorry, I didn’t measure. Cooled till lukewarm, then spread on banana mixture and returned it to the fridge. It was really good.

Note:
If you don’t have a double boiler, you can just nest a smaller saucepan or metal bowl inside a larger saucepan partially filled with water. Be careful not to overfill – the water should not quite touch the upper pan or bowl – or it may spurt up the sides when it comes to a boil and scald you.
