Bhujia (Curried Eggs)

2 Tbsp. oil
2 large onions, chopped
2 cloves garlic, finely chopped
1 tsp. ground turmeric
1 tsp. ground ginger
1 tsp. ground cumin
1 tsp. paprika
1 1/2 tsp. ground coriander
1/2 tsp. salt
1/4 tsp. ground red pepper (chili powder) (opt)
1 tsp. garam masala (opt)
1 1/2 cups chopped tomatoes, fresh or canned
4-6 hard-boiled eggs, shelled and cut in half
Saute onions and garlic in oil until transparent. Add spices and salt, stir and fry for 1-2 minutes, then add tomatoes, cover and simmer for about 20 minutes, or until thick. This is the sauce base, or turka.
Add eggs and simmer for another 5 minutes. Serve over boiled rice.
