Blueberry (and Banana Baby Food) Muffin Pie

I like making muffins. I like eating muffins. I don’t like washing muffin tins. And I hardly ever remember to buy those paper liners (besides, they cost extra). My baby just wouldn’t eat this mixed banana baby food, and I hated to see it go to waste. Hence my very recent invention of:
Blueberry Baby Food Muffin Pie
1 1/2 cups whole wheat flour
1/2 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
1 – 3.5oz container Gerber Banana Apple Pear baby food (or other fruit baby food)
1/4 cup vegetable oil
1/3 cup orange juice
1 cup blueberries
Stir together dry ingredients: flour, sugar, baking powder and salt. Stir together egg, baby food, vegetable oil and orange juice. Make well in dry ingredients, pour in wet, add blueberries, and stir together just until moistened. Dump into greased pie plate and bake at 350*F for about 30 minutes or until top springs back when touched. Cut into wedges and serve.
The muffin turned out tender and moist in the center, crisp on the edges. I really liked the flavor. Even cold. I’m going to try making other muffin recipes in a pie pan to see if they turn out as well. Feel free to experiment with this recipe and make substitutions with what you have. I’m sure not everyone has baby food sitting around the house uneaten…
I was thinking chocolate chips and walnuts make a nice combo…
