Chai Cha Tangawize (Kenyan Tea)
2 cups water
1 Tbsp. chopped ginger root
4 tsp. sugar
5 tsp. black tea leaves
2 cups milk
Bring water to a boil and add ginger root and sugar. Simmer for 10 minutes (longer for a stronger ginger flavor). Add tea leaves and simmer for another 3 to 5 minutes, then add milk and heat again until hot, but not boiling. Remove from heat, strain out tea leaves and ginger root and serve. Add more sugar to taste if you like your tea sweeter.
