Friday Morning Pancakes

1 1/2 cups flour
1 tsp. salt
2 tsp. baking powder
3 Tbsp. sugar
3 Tbsp. oil (or melted butter or marg)
2 eggs
1 1/4 cups milk
Put all ingredients in a bowl. Whisk together. Ladle onto a hot griddle or fry pan, to make pancakes of whatever size and shape you like. When top is covered with bubbles, flip and cook the other side. Stack ‘em up and serve ‘em hot with butter and syrup.
