Frozen Peanut Butter Pie
A good friend made this scrumptiously DEEE-licious pie for Father’s Day. I was lucky enough to get a piece…YUM!!! And the recipe.

Frozen Peanut Butter Pie
Crust:
24 Nutter Butter or other peanut butter sandwich cookies
5 Tbsp. butter
Crush cookies using a stout plastic bag and a rolling pin, or a food processor. Melt butter and mix together with the crushed cookies. Press onto the bottom and sides of a 9″ pie pan and place in the fridge while you prepare the filling.
Filling:
1 – 8oz. pkg. cream cheese (can use regular or reduced fat)
1 cup creamy peanut butter (eg. Jif)
3/4 cup sugar
1 Tbsp. vanilla
1 – 8oz. tub of Cool Whip or similar whipped topping, thawed
Beat together cream cheese, peanut butter, sugar and vanilla with an electric mixer or blender until smooth. Fold in 1 1/2 cups Cool Whip until well blended. Spoon into prepared crust and freeze 4 hours or until firm. Store in freezer until ready to eat. You may remove from the freezer and allow to thaw up to 30 minutes before serving, or eat it straight out of the freezer. Serve with remaining Cool Whip, and/or drizzle chocolate sauce on top.
