Hamburger & Rice meets Refried Rice. :)

Hamburger Refried Rice

1 1/2 cups long grain rice
3 cups water
splash of oil

3/4 – 1 lb ground beef (or other meat)
1/2 onion, finely chopped
4 or 5 small-medium carrots, sliced (about 2 cups or a little more)
large head broccoli, cut into florets
1/2 – 1 cup green peas
2 or 3 Tbsp water (approx) or a little more

3 eggs
2 Tbsp (approx) butter, or a little more
2 Tbsp soy sauce
salt and pepper to taste

Boil rice earlier in the day, or the day before. Set aside in fridge to cool.

Brown ground beef and onion in large skillet or wok. Season with salt and pepper. Add sliced carrots. Cover tightly and cook over medium heat 10 minutes. Add broccoli and peas, and 2 or 3 Tbsp water. Re-cover tightly and cook another 5 – 7 minutes. Add butter, rice and soy sauce and a little more water, if needed. Stir together, reduce heat a little, re-cover and cook another 5 minutes. Watch to make sure it doesn’t start to stick to the bottom too much. Meanwhile, brown a tsp of butter in another pan, beat eggs, pour in and cook until set. Slice into strips, stir into rice. Check to make sure vegetables are tender. If not, add a little more water and cook until done.
