Johnnycakes
My daughter is learning about early US history, so one of our recent projects was to make Johnnycakes. This doesn’t make a very big batch – only enough for about 2 or 3 kids, so you’ll probably need to double (or triple) it if you’re feeding a hungry bunch!

Johnnycakes
3/4 cup cornmeal
1/4 cup whole wheat flour
1 1/4 tsp. baking powder
1 Tbsp. sugar
pinch salt
1/2 cup milk
1 egg
2 Tbsp. vegetable oil
Lightly grease a skillet or griddle and heat over medium heat.
Mix cornmeal, flour, baking powder, sugar and salt in a bowl. Add milk, egg and vegetable oil, and mix until blended.
Spoon onto heated skillet and cook like pancakes. Serve hot with butter and syrup or honey.
Or carry johnnycakes (aka journey cakes) along on long trips when you’ll need some grub. Just like in the old times….
