If you like an orange flavor, but don’t want to spend several minutes grating orange rind (and your knuckles), there’s a quicker way: toss the whole orange in the blender. I’ve added banana to this muffin to mellow out the orange a little (orange rind is a little bitter). I’ve kept the sugar content at a moderate 1/2 cup, but you can increase it to 3/4 cup or even more, if you like a sweeter muffin. I think these would be nice frosted, as well.

Orange Banana Oatmeal Muffins

1 1/2 (1 – 2) bananas
1 orange (washed, peel on)
2 eggs
1/2 cup buttermilk
1/4 cup veg oil

1 cup whole wheat flour
1 cup oatmeal
1/2 tsp salt
1/2 – 3/4 cup sugar
1/2 tsp soda

Blend moist/wet ingredients in blender until well blended. Stir together dry ingredients in a bowl. Make a well and pour moist, blended ingredients in. Stir just until moistened. Spoon into greased muffin cups and bake at 350* for 12-15 minutes, just until done – when the top springs back when lightly touched.
