Simple Little White Cake
Wondering where I’ve been? House hunting, that’s what. Has a way of eating up your time…(no pun intended). Oh yeah, and home schooling. And packing around a squirmy baby. So, even though there isn’t a picture for this one, trust me: it’s tried and true.
Simple Little White Cake (a.k.a. Dinette Cake)
1 1/4 cups all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk
1/3 cup shortening (can substitute butter)
1 egg
1 tsp. vanilla
With electric mixer on low speed, blend all ingredients together well for about 30 seconds, scraping the sides of the bowl. Then beat on high speed for 3 minutes. Pour into a greased and floured 8″x8″ (or 9×9) pan, or 9″ round cake pan. Bake at 350*F for about 35 minutes for a round pan, maybe 5 minutes more for a square pan. Cake is done when a toothpick inserted into the center comes out clean.
This cake is excellent served with fresh sliced strawberries sweeted with a little sugar, and a dollop of homemade whipped cream. A la strawberry shortcake.
