Snickerdoodles
I made these the other day for tea with friends.

1/2 cup shortening
1/2 cup butter
1 1/2 cups white sugar
2 eggs
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
2 Tbsp. sugar
2 tsp. cinnamon
Cream shortening, butter and sugar together thoroughly. Beat in eggs. Add flour, cream of tartar, soda and salt, and mix well.
In a small bowl, mix together (approx) 2 Tbsp sugar and 2 tsp cinnamon. Shape dough into balls about 1 1/2″ across and roll in cinnamon-sugar mixture. Place on ungreased cookie sheet about 2 or 3 inches apart.
Bake at 400*F for 8 minutes. Remove from cookie sheet and let cool. The cookies will puff up in the oven and crack on the top, then settle as they cool.
