Sweet and Sour Meatballs
Serves 4

Meatballs
1 lb. ground beef or pork
2 or 3 slices of bread torn into small bits, or 1/2 cup dry bread crumbs
2 Tbsp. finely chopped onion
1/2 – 1 tsp. salt
1 egg
1/4 cup milk (if using dry bread crumbs, otherwise, can omit)

Mix all ingredients together in a bowl with hands. Shape into balls, about 1 1/2″ wide. Place in a skillet, cover and cook over medium heat about 20 minutes, until done (no longer pink inside). Turn if you want to brown more than one side.

Don’t forget to put (about 1 1/2 cups) rice on to boil.

Sweet and Sour Sauce
1/2 cup packed brown sugar
1 Tbsp. cornstarch
1 – 20oz. can pineapple chunks
1/3 cup vinegar
1 Tbsp. soy sauce
1 small green pepper, chopped (or 1/2 large)

Stir together brown sugar and cornstarch and put in skillet with meatballs. Stir in pineapple – including syrup, vinegar and soy sauce. Bring to a boil, while stirring. Reduce heat, add green pepper, cover, and simmer about 10 minutes, stirring occasionally, until sauce is thickened and green pepper is crisp-tender, or tender, depending on how you like it.

Serve over rice.
